Lunchbox Lemon Slice

Makes 18

  1. 1/2 cup sweetened condensed milk
  • 100g unsalted butter
  • 200g Granita biscuits, crushed
  • 1 cup desicated coconut
  • 1 lemon, zest
  • For the Zesty Lemon Icing
  • 2 cups icing sugar, sifted 
  • 40g, butter, melted
  • Juice of the lemon   

 

  1. Line a brownie tin with grease proof paper.
  2. In the food precessor, crush granita biscuits until fine. Pour into a large mixing bowl with coconut and rond zest of the lemon.
  3. In a medium sauce pan, melt the butter and condensed milk over a low heat until melted and armed through (Approximatly 4 minutes). Stir using a wooded spoon.
  4. Pour over the biscuits and coconut and combine well. Push into the slice tin until 1cm thick and flat - Refirigerate.
  5. For the icing, sift sugar into a bowl. Whizz with melted butter and enough lemon juice to bring together and make a good consistancy for spreading. Spread over slice and refrigereate for 45 minutes before cutting to small squares.
